Abstract: Controlling blood glucose concentration is the primary medical concern in treating people with diabetes mellitus.Postprandial glycemia is directly related to rate of starch digestion. In the first study, chemical modifications of starch were evaluated.Rate of in vitro starch hydrolysis was slow for raw cornstarch (RCS) but was not affected by chemical modification; furthermore, for most modified starches, as the degree of modification increased, extent of hydrolysis decreased, suggesting an increase in the amount of resistant starch.
