Abstract: Obstructive sleep apnea (OSA) is a chronic pathological condition characterized by recurrent pauses of breathing during sleep due to obstruction of the upper airways, which leads to sleep disruption. The clinical presentation of OSA includes symptoms that occur during both sleep and daytime. Polysomnography is the gold-standard method for OSA diagnosis. Disruption of the normal sleep architecture is the main short-term complication of OSA. Besides daytime symptomatology, OSA is strongly linked to cardiovascular morbidity. Data on the association between long-term dietary habits and the presence or severity of OSA are so far scarce, and most studies have focused on specific dietary nutrients. Despite the lack of evidence on the role of long-term dietary habits as a risk factor for OSA, nutrition has an important role in the management of sleep-disordered breathing.
