Abstract: . Absolute and essential oils are a complex mixture of various classes of organic compounds in their chemical composition. The components of oils are: carbohydrates, alcohols, aldehydes, ketones, complex ethers, lactones, acids and others. The characteristic and quantitative investigation of Azalea absolute oil’s evaporating solution mixtures with the modern physico-chemical methods – using air-liquid, adsorb, thin-layered chromatograph and infrared spectrum was conducted in Scientific-Research Institute of Food Industry. With the steam distillation and extracting after diethyl ether distillate the essential oil was received from Azalea absolute oil. In order to get more hopeful results, the essential oil was separated into fractions – hydrocarbon, oxygen containing substances, free phenols, free and tied acids. After Azalea absolute oil chemical composition research, it was established that it consists of not less than 95 components, among which 67 were identified by us. 57% of Azalea absolute oil is oxygen containing substances – basically alcohols.
