Abstract: Selenium (Se), an essential trace element, plays a vital role in many physiological processes, such as animal growth and development, reproduction, immune regulation, and antioxidant functions. Selenium deficiency can adversely affect body development, leading to various diseases. Selenium mainly exists in the body in forms of selenoprotein which are crucial for maintaining redox homeostasis, immune regulation, etc. This paper aims to provide a scientific basis for the efficient use of selenium dietary supplementation through reviewing the selenium discovery, selenium′s role in animal production and the significance of various selenium-enriched livestock and poultry products for human health.
