Unlocking the Nutritional Secrets of Tassey: A Traditional Nyishi Dish from Arenga obtusifolia Mart. in Arunachal Pradesh
Year: 2024
Type: article
Abstract: The objective of this study was to perform a proximate analysis of Tassey, an indigenous food prepared by the Nyishi tribe of Arunachal Pradesh from the bark of Arenga obtusifolia. The analysis aimed to determine the nutritional value in terms of carbohydrate, protein, fat, fiber, moisture, and ash content in Tassey. The proximate analysis was conducted using standard biochemical methods to quantify the carbohydrate, crude protein, crude fat, crude fiber, moisture, and total ash content in Tassey. These methods provided a qualitative assessment of the food's nutritional components. The analysis revealed that Tassey is primarily composed of carbohydrates (52.75 g/100g of the food) followed by moisture content (46.3 g/100g). Other nutritional components such as protein, fat, and fiber were present in trace amounts. These results indicate that Tassey is a carbohydrate-rich food with significant moisture content.
