This is to establish an optimization and organization policy of a maintenance, by taking into account the specificities of the dairy industry in terms of size which is generally small, fragility of the manufacturing process, the labor system based on a continuous 3x8 mode and especially in terms of the technological manufacturing process that does not support any quick stop, which may effect the organoleptic and bacteriological quality materials and foods during processing. The operation of this type of company requires a high availability of production equipment. This solicitation on machines requires good organization of the maintenance. Through the partial or total deployment and the combination of certain quality methods and tools, we have developed an optimization and organization policy of maintenance, to meet the requirements and the context of this type of industry.
