Abstract: Gastronomy is a branch of science that examines the nutritional habits of different cultures, preparation and presentation stages of dishes, and the rituals of special occasions. It examines the structure of societies on the axis of food and beverage. Gastronomy reflects not only the food but also the cultural structures of a society. Interaction with culture ensures that gastronomy has an important place in tourism. Destinations with tastes unique to their regions are among the primary preferences of tourists who want to have gastronomic experiences in their travels within the framework of gastronomic tourism. New gastronomic trends are emerging within the framework of different flavor types and social preference changes. Emerging gastronomic trends can be in the form of different types of food and food preparation or eating processes. In this study, current gastronomy trends, which attract attention in the context of tourism, were examined. Secondary data was used in the research phase of the study. As a result of the study, many popular gastronomic trends, which were evaluated under two main headings, focused on alternative nutrition and focused on developing dining experience, were identified. Some determinations have been made regarding these gastronomic trends.
