Abstract: Purple yam (Dioscorea alata Linn.) is an untapped natural nutrient-rich source of food ingredient available in Sri Lanka. The present study aimed to transform purple yam into shelf-stable flour and to develop a Ready-To-Cook (RTC) pudding mix. The edible portion of D. alata yams was blanched, dried, powdered and sifted to process the yam flour.
