Experimental research on the performance response of gas stoves under different gas pressures

Year: 2025
Type: article
Abstract: This paper investigates the performance of gas stoves under varying gas pressures. Two commercial and two domestic gas stoves were tested at pressures ranging from 2.8 kPa to 100 kPa. A new parameter—the temperature rise rate— is introduced to evaluate whether the gas stove's cooking performance can meet users' daily cooking needs. The results show that as the gas pressure increases, the heat input rate of the gas stove significantly rises, an increase in CO emissions, with combustion deviating from the stable zone. When the gas pressure increases by 10 times and 20 times, the thermal efficiency will decrease by more than 20 percentage and 40 percentage, respectively. Users would incur 50 %–150 % higher energy costs and carbon emissions. The study finds that a gas stove with a temperature rise rate of 0.8 kg °C/s is good for cooking, and the temperature rise rate exceeding 1.5 kg °C/s will meet the “fierce fire” demand.
