Abstract: Allergy to mammalian meat is caused by IgE-mediated reactions to the mammalian oligosaccharide epitope galactose-α-1,3-galactose (αGal). The αGal epitope is present on glycoproteins and glycolipids from non-primate mammals, including cat and dog.1,2 Allergen extracts are the current standard for the diagnosis and treatment of allergy.3 These allergenic source materials (eg, pet hair and dander) comprise a heterogeneous mixture of mammalian proteins, including the major and minor allergens, as well as nonallergenic proteins, which could contain αGal.
