Green extraction method and microencapsulation of tannins from young coconut husks-based food waste using gelatin/nanofiber cellulose
Year: 2025
Type: article
Abstract: This study aims to extract tannins using an eco-friendly method, optimizing temperature and the gelatin/cellulose nanofiber (NFC) ratio as encapsulants to achieve optimal microcapsule characteristics. The research was conducted in three stages: eco-friendly tannin extraction, tannin encapsulation, and microcapsules characterization. Tannin from coconut fiber with relatively high content and yield has been obtained using an eco-friendly method. Furthermore, the optimal temperature and gelatin/NFC ratio conditions to produce tannin microcapsules with the best characteristics have also been obtained. Tannin microcapsules have the potential to be applied in wider fields, including the pharmaceutical and food industries, as a source of bioactive compounds.
