Abstract: We are pleased to present the 8th Food Ingredient Asia Conference proceedings, themed “Toward One Health through Sustainable and Innovative Food Science and Technology.” This conference took place from 4 to 6 September at the Jakarta International Expo (JIExpo) in Jakarta, Indonesia. The 8th Food Ingredient Asia Conference, alongside the Food Ingredient Asia (FiA) Exhibition, was hosted by several institutions including the SEAFAST Center, the Department of Food Science and Technology, the Faculty of Medicine, the Department of Human Nutrition of IPB University (Bogor Agricultural University), and the Indonesian Association of Food Technologists (IAFT). The conference served as a pivotal platform for stakeholders, researchers, practitioners, and policymakers to engage in meaningful discussions, exchange insights, and foster collaborations to advance food science, technology, and human nutrition for a healthier and more sustainable future. This conference was attended by 260 participants from diverse backgrounds, contributing to a rich exchange of knowledge and expertise. The papers included in this proceeding have undergone a rigorous peer-review process to ensure their scientific quality, validity, and relevance to the field. We would also like to express our deepest gratitude to the panel of reviewers for their time, expertise, and commitment in evaluating the submitted manuscripts. Their meticulous assessments and constructive feedback were invaluable in maintaining the high standard of this proceeding.
