Survival in Sodium Chloride Solutions of Anisakis Nematodes Parasitizing Commercial Fish Species in the Ural-caspian Basin

Type: conference-paper
Abstract: Parasitological studies of commercial ichthyofauna revealed annual infection of the Ural River fish by larvae of nematodes of the genus Anisakis. In the fish body, anisakis parasites were localized on the serosa of various internal organs in the form of an encysted spiral. Anisakidosis affected the pike perch, the Volga perch, the asp, the sabrefish, the blue bream and other fish species. Eating fish and fish products containing live anisakis nematodes can cause infection and/or allergy in humans. In addition to the heat-treating of fish, salting and marinating can also disinfect fish products from nematodes. Establishing the survival time of anisakis nematodes in NaCl solutions of various concentrations is of considerable practical and scientific interest, which determined the purpose of this research. The experiments used larval stages of nematodes Anisakis schupakovi Mosgovoy, 1951. The nematodes were kept at room temperature in sterile sodium chloride solutions in the following concentrations: 2, 3, 4, 5, 10, 15, and 34%. The studies showed that an increase in the salt solution concentration decreased the survival time of the nematodes from 58 days to 2 hours. The obtained results of parasite resistance to salt solutions are important to consider when cooking fish dishes without heat treatment of raw fish. When using salt solutions of lower concentration, it is necessary to increase the exposure of fish to salt solutions in accordance with the presented data.
