Abstract: The global health crisis caused by Covid-19 has had a series of consequences for the Brazilian population, exposing an already existing problem: food insecurity. The changes that have occurred due to the emergence of the pandemic have had major impacts on the health of the population. The objective of this study is to analyze the increase in food insecurity during the Covid-19 pandemic and its association with the consumption of processed foods, especially in Brazilian regions most affected by poverty. This is a literature review, developed from the Pubmed databases. The keywords in English “food insecurity”, “Latin America”, “Brazil” and “covid-19” were used in association with the Boolean operator AND, using predefined inclusion and exclusion criteria. This study concluded that people who already lived in a vulnerable situation before the pandemic were the most affected by food insecurity. Due to the economic crisis during the pandemic, there was an increase in unemployment, affecting the income of many people, in addition to the increase in food prices due to inflation. As a result, many people began to consume cheaper foods, such as ultra-processed foods.
