Type: article
Abstract: Antioxidants are substances that inhibit oxidation. Plants, especially fruits and vegetables, are good sources of natural antioxidants. Corn (Zea mays L.) is one of the plants that contains antioxidants. Various studies have shown that most parts of the corn plant contain antioxidant compounds. The parts of corn that contain antioxidant compounds are the cob, ear, hair, leaves and seeds. Many methods have been developed for the analysis of antioxidants in corn (Zea mays L.) plants consisting of seeds, hairs, leaves and cobs. It is known that the most widely used antioxidant analysis method on corn plant parts is based on previous studies using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) method. The DPPH method is the most popular analytical method for antioxidant activity. The principle of the DPPH method is the ability of compounds capable of donating hydrogen atoms to scavenge DPPH free radicals to reduce the intensity of the DPPH radical colour by measuring its absorbance at a wavelength of 517 nm. The purpose of this paper was to review several articles about the antioxidant activity of corn (Zea mays L.) plant parts by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) method.
