Abstract: The process of extrusion is a part of many modern manufacturing technologies that are applied in various industrial productions. In the food industry, the process of extrusion is used to produce popular foods such as cereal mixes, confectionery products, pet foods, etc. The advantages of extrusion technology are continuously applied in many studies in order to develop foods with more significant functional properties that could be produced in a time-effective and cost-effective way. In recent years, computer vision has become one of the preferred technologies in the development of new methods for quality control of food product production. This paper proposes a system for the evaluation of the quality parameters of extruded foods using a computer vision method. This system combines hardware and software modules that are developed for the discussed topic. A justification of the proposed system is provided on the basis of an experiment using extruded corn snacks made with different ingredients.
