Pearl Millet Porridge Mix: A Comprehensive Study on Formulation, Nutritional Content and Sensory Perception

Abstract: Pearl millet, an underutilized crop rich in nutrients, was used to develop an instant porridge mix.Optimal germination was achieved with 12h soaking and 24 h sprouting. Among formulation sample (30g malt) showed the best sensory acceptability. Nutritional analysis confirmed it's health benefits.
