PSVII-12 Microbial evaluation of inoculated fresh meat utilizing imaging and computer vision.
Year: 2025
Type: article
Abstract: The objective of this study is to evaluate microbial contamination in inoculated fresh meat using advanced imaging technologies, aiming to enhance food safety and preservation methods. Fresh meat samples were inoculated with Salmonella spp. and analyzed using a fluorescence spectroscopy system to monitor cell activity and morphology. Methodology conditions included fluorescence imaging to assess microbial activity and advanced visualization to examine cell morphology in ground meat. Preliminary results indicate that cell morphology remained intact under the conditions tested, suggesting stability in cellular structure despite microbial inoculation. These findings contribute to the understanding of all types of microbial behavior and the effects it can have on meat quality and preservation. In conclusion, further research is required to refine imaging techniques and explore broader applications in food safety monitoring at all different levels.
