Lipidomics analysis of the effects of gender on the lipid composition of pigeon meat
Year: 2025
Type: article
Abstract: This study aimed to investigate the impact of gender on the quality of meat and lipid composition in the breast meat of White King pigeons. Lipidomics analysis was employed to characterize the lipid profiles of male and female pigeon meat. In comparison, Pearson's correlation analysis was conducted to assess the relationships between differential lipid species and key meat quality parameters. The findings revealed that, compared with female pigeon meat, male pigeon meat showed significantly higher lightness, redness, hardness, chewiness, and water-holding capacity (P < 0.05). Lipidomic profiling revealed significant differences in phosphatidylcholine, phosphatidylinositol, and phosphatidylethanolamine levels (P < 0.05), all of which were elevated in males, indicating an optimal nutritional quality. Moreover, phosphatidylcholine showed a positive correlation with water-holding capacity. In summary, these results provide new insights into the gender-related variations in the meat quality of White King pigeons, offering valuable information for their differentiation and evaluation.
