Abstract: D.1.3 provides a review of evidence and presents findings of the system mapping study, analyzing the food system factors and associations between these factors, which jointly explain consumers’ choices of alternative protein food (APF) in 13 European countries. In particular, the study aimed at eliciting so-called leverage points in the food systems, that is the determinants best connected with other well-connected determinants.
