Abstract: With the aim of increasing company productivity in the white sugar refining sector, this study focuses on the development and application of an approach based on artificial intelligence, more specifically machine learning, for making production decisions. The first part deals with the fundamental concepts and the industrial context relating to productivity and production systems. The second part presents the methodology adopted, including the execution of codes and algorithms on the Colab platform, and the use of mathematical formulae to calculate final productivity. This innovative approach aims to optimise business performance by harnessing data and making informed decisions. By improving production processes and reducing losses, it opens up promising prospects for white sugar refining
