Type: dissertation
Abstract: Meat hygiene is essential for public health and food safety, particularly in developing countries where proper handling and sanitation practices are often inadequate. This study examines the knowledge, attitude, and practices of meat hygiene among slaughterhouse workers and meat traders in Bosaso District, Puntland State of Somalia. The research explores factors influencing hygiene standards, the prevalence of contamination risks, and the effectiveness of existing food safety regulations. Using a cross-sectional study design, data was collected through surveys and interviews with slaughterhouse workers, butchers, and meat traders. The findings indicate that while a majority of respondents recognize the importance of meat hygiene, gaps exist in proper handling, personal hygiene, and food safety practices. Key challenges identified include inadequate training, lack of awareness, and poor infrastructure in slaughterhouses and meat markets. Additionally, economic constraints and cultural practices contribute to inconsistencies in maintaining hygiene standards. The study underscores the urgent need for training programs, policy interventions, and improved regulatory enforcement to enhance meat hygiene practices. Recommendations include strengthening hygiene education, implementing regular inspections, and promoting the use of modern slaughtering and storage techniques. These findings provide valuable insights for policymakers, public health authorities, and stakeholders working to improve food safety and public health in Somalia.
