Abstract: The aim of the project is to develop foods rich in bioactive active ingredients that support human health. The most important types of plant polyphenols are tannic acids and tannins; flavonoid dyes; and finally, some phenolic fragrances. They are very diverse and widespread substances, characterized by the presence of a large number of phenolic rings.
