Abstract: This documentation forms the basis for the realization of the project prototypes of new food products. Together with the prototype objectives, general considerations and recommendations, it provides a scientific-technological description of the R&I process carried out to realize the prototypes as result of the testing phase in lab / at small-scale level (WP4) and feedback gathered from the in-field validation (WP5). According to the impact pathway approach, it describes the conducted activities, the reached outputs and outcomes, and the obtained measures of main key performance indicators demonstrating the impact. The detailed functional and nutritional properties of the validated prototypes are reported in D5.16
