Abstract: Poultry meat and its processed products are one of the most important components of rational human nutrition. These products are a source of high-quality protein, vitamins, unsaturated fatty acids and other substances necessary for the normal development of the human body. Along with the implementation of programs to increase the productivity of poultry and increase production, it is also necessary to improve its quality. The solution of this problem is of great importance in the implementation of the concept of state policy in the field of healthy nutrition, aimed at eliminating the deficiency of animal protein.
