Abstract: The unique properties of chitin and chitosan attract the attention of many specialists in various fields of science. The role of biopolymers in our lives is recognized by everyone. This article presents the results of obtaining chitosan biopolymer from a new promising source - narrow-clawed crayfish. Information about the narrow-clawed crayfish and its distribution in Uzbekistan is also provided.
