Abstract: Strawberry (Fragaria x ananassa) is a natural bioactive source rich in phenolic compounds, especially anthocyanins. This study aims to compare the chemical characteristics and toxicity of strawberry extracts obtained using NADES and conventional solvents. Functional group analysis was performed using FTIR, while differences in chemical patterns were evaluated through PCA chemometric analysis. Qualitative and quantitative profiles of anthocyanin compounds were analyzed using LC-MS/MS, and toxicity testing was evaluated based on LD50 values using the OECD 423 method. FTIR results showed significant differences in functional group absorption between strawberry extracts using NADES and conventional solvents, especially in the O-H, C=O, and aromatic C=C groups. PCA of the FTIR spectrum can group strawberry extracts based on solvent type. LC-MS/MS analysis showed that the anthocyanin content in strawberry extracts using NADES was higher than in conventional solvents. Toxicity testing showed that the LD50 value of strawberry extract using NADES LD50 < 5000 mg/kg, while conventional solvents were LD50 < 2000 mg/kg. The results showed that NADES has the potential to be a safe alternative solvent for the extraction of bioactive compounds from strawberrie
