Enhanced Anti-Inflammatory Activity of Anthocyanin-Derived Pigments Under Hypoxic Conditions In Vitro

Year: 2026
Type: article
Abstract: Objectives: Inflammation contributes to many chronic diseases and cancer progression through cytokine-driven signaling pathways, including hypoxia-induced activation of NF-kB and interleukin-11 (IL-11). Anthocyanins (ACNs), plant polyphenols, can modulate these pathways but are chemically unstable. Pyranoanthocyanins (PACNs) derived from ACNs are more stable, but their biological activity is understudied. Here we compared anti-inflammatory effects of ACNs and PACNs in experimentally induced in-vitro hypoxic conditions by assessing NF-kB activation and IL-11 suppression.
