Nutrient Composition Analysis of a Produce Prescription Program in the Mississippi Delta
Year: 2026
Type: article
Abstract: Objectives: Despite growing investment in Food is Medicine (FIM) interventions, the nutritional content of provided foods remains uncharacterized, limiting the ability to link program exposure to diet and health outcomes. Thus, we quantified the 1) macro- and micronutrient composition and 2) fruit and vegetable portions provided by a produce prescription intervention in the Delta GREENS (Growing a Resilient, Enriching, Equitable, Nourishing food System) FIM Project.
