Challenges and recommendations for improving the caviar labeling system

Abstract: The International Union for Conservation of Nature (IUCN) Red List classifies sturgeon as the most endangered species. Illegal trade still poses a significant threat today. In 2000, a universal labeling system was introduced for the international caviar trade. This letter discusses the current state of labeling and suggests ways to improve it.
