Spatial Heterogeneity of Lignocellulosis in Different Pod Sections of Postharvest Common Bean ( Phaseolus vulgaris L.)

Year: 2026
Type: article
Abstract: Fresh common beans are a vital source of plant protein, but rapid postharvest lignocellulosis severely compromises their palatability and nutritional value. However, the spatial–temporal dynamics of these processes across different pod tissues remain unclear. This study aimed to elucidate the spatial–temporal accumulation patterns of lignocellulose deposition by comparing physiological responses and cell wall‐related enzyme profiles in the pedicle, middle, and top sections of three common bean varieties (Qingbangdou, Baibangdou, and Wujinbaibangdou) during cold storage. Significant variety‐specific spatial patterns were observed. In Qingbangdou, cellulose accumulation first appeared in the pedicle and progressed toward the top, whereas lignin deposition initiated in the top and progressed toward the pedicle. In Baibangdou, both cellulose and lignin accumulation were first detected in the middle and then progressed to the pedicle and top. In Wujinbaibangdou, cellulose accumulation began in the top and extended to the middle, while lignin deposition advanced from the pedicle to the middle and then to the top. These distinct spatial–temporal accumulation patterns suggest variety‐specific regulatory mechanisms underlying lignocellulose deposition. Our findings provide variety‐specific guidance for postharvest management in common bean production systems.
