Abstract: This article proposes a hydrodynamic model of the forced-convective drying process of fruit, vegetable and melon products; the direction of the heat-carrier flow towards the product being dried, the degree of dispersion of the product layer, and the drying hydrodynamics for the shapes of spheroids, a flat disc and a flat plate are modelled on the basis of the necessary formulas and criterial equations, using plastic, metal and wooden lattice supports as examples.
