Color-based prediction of mango total soluble solids and vitamin C using reflectance color measurement
Year: 2026
Type: article
Abstract: The visual appearance of mango peel color is often used as an indicator of the fruit’s sweetness or acidity. One tool for quantitatively measuring fruit peel color is reflectance color measurement. Therefore, this study aimed to evaluate the use of reflectance color measurement to predict total soluble solids (TSS) and vitamin C in mangoes. The results showed that the tested method could accurately predict TSS and vitamin C. In TSS, the accuracy values obtained were coefficient of determination in calibration set ( R 2 c ), root mean square error of calibration (RMSEC), coefficient of determination in cross validation set ( R 2 c v ), root mean square error of cross validation (RMSECV), and ratio of performance to deviation (RPD) of 0.94, 0.63, 0.93, 0.69, and 4.08, respectively. Meanwhile, the prediction of vitamin C obtained accuracy values of R 2 c = 0.87, RMSEC = 0.60, R 2 c v = 0.85, RMSECV = 0.67, and RPD = 2.60, highlighting its potential relevance to fruit nutritional quality and human health. These results provide evidence that reflectance color measurement could be an alternative in developing sustainable and non-destructive prediction models. Further studies are also needed to examine the stability and accuracy of predictions across various other parameters.
