Effects of extraction solvents and ultrasound-assisted extraction on bioactive compounds and antioxidant activities of mango by-products

Type: article
Abstract: This study evaluated the effects of extraction solvents and ultrasound-assisted extraction (UAE) on the recovery of bioactive compounds and antioxidant activities from mango (Mangifera indica L.) pulp, peel, and seed. The proximate composition, physicochemical properties, and color characteristics of the different mango parts were compared to assess their potential as value-added food resources. The pulp had the highest moisture content, soluble solids, and total acidity, whereas the seeds had significantly higher crude fiber and ash contents. Among the extraction solvents tested, 70% ethanol yielded the highest total polyphenol and flavonoid contents, with the seed showing the greatest values (387.71 μg GAE/g and 201.85 μg CE/g, respectively). UAE further enhanced the recovery of bioactive compounds from all mango parts. The peel and seeds exhibited substantially greater antioxidant activities than the pulp. In particular, the peel and seeds extracted with 95% ethanol exhibited the highest DPPH radical-scavenging activities (76.30% and 76.18%, respectively). Overall, the results demonstrate that mango peels and seeds are promising sources of natural antioxidants, and that the extraction solvent and UAE markedly influence the recovery of bioactive compounds and antioxidant activities, supporting the sustainable utilization of mango processing by-products as value-added functional food ingredients.
