A Revolução digital na Nutrição: como a Inteligência Artificial está transformando o atendimento e o planejamento alimentar?
Year: 2026
Type: article
Abstract: Artificial Intelligence (AI) has become increasingly present in the field of nutrition, bringing significant innovations to clinical care and meal planning. This work consisted of a narrative literature review on the application of AI in nutrition, aiming to analyze its contributions to clinical care and meal planning, as well as its ethical and professional implications. The research was conducted in PubMed, Google Scholar, and SciELO databases, prioritizing publications between 2020 and 2025. The studies analyzed highlighted multiple applications of AI in the field of nutrition, including personalized meal plans; recognition and estimation of food intake from images; automated assessment of body composition; remote monitoring; public health initiatives; and tools for food safety. Among the observed benefits were greater agility in data processing, support for clinical decision-making, and the potential to expand access to nutritional services. However, the review also highlighted significant challenges, such as the risk of algorithmic biases, limitations of datasets, concerns about privacy and data protection, and the possibility of reducing the humanized dimension of care. The conclusion is that AI represents an important tool to support nutritionists, provided its use is accompanied by regulations, professional training, and ethical practices that preserve clinical judgment and the relationship with the patient.
