Evaluación de la capacidad antioxidante de la dieta en hipertensión arterial:consideraciones metodológicas sobre el ORAC
Year: 2026
Type: article
Abstract: The oxygen radical absorbance capacity (ORAC) value assigned to a serving of beans may depend on whetherthe reference sample is raw, cooked, or drawn from a different recipe. Even when two preparations receive the samescore, sodium added during cooking may distinguish them in a way that matters for blood pressure. Comparing foodcomposition research, observational studies, and feeding trials helps clarify the role of ORAC in hypertension research. Itscontribution depends on two questions: whether the score reasonably represents the diet consumed and whether it addsinformation beyond dietary patterns and sodium intake. To address these questions, this paper proposes a frameworkthat distinguishes the chemical food assay, estimated dietary exposure, biological response, and clinical outcome. In theDominican Republic, the first step is to document local preparations and portion sizes and test whether participantsretain their relative ranking when uncertain food matches are changed. This makes it possible to assess explicitly whatthe score adds to blood pressure research.
