Exploring the efficient utilization of potato peel: Latest advances in the extraction of bioactive compounds and their applications in multiple fields
Year: 2026
Type: article
Abstract: The prosperity of the potato processing industry has generated a substantial amount of potato peel (PP). Valorization of PP into high-value products represents a promising strategy for addressing resource wastage and environmental pollution, thus attracting widespread attention. PP is rich in diverse bioactive compounds with functionalities including antioxidant, antimicrobial, anti-inflammatory, lipid-lowering, and hepatoprotective effects. These attributes make PP a potential functional additive for applications in the food, industrial, and biopharmaceutical sectors. This review provides a comprehensive overview of the bioactive constituents of PP and their extraction methods, with a particular focus on the health benefits and application potential of these bioactive substances across different contexts. Given that economic cost and efficiency are key factors in the extraction of bioactive compounds, this article further proposes recommendations for the research and development of green energy. This paper systematically integrates for the first time the whole chain of research progress on the extraction technology, health function validation and cross-field application of PP bioactive components, which fills the gap of the lack of comprehensive review in this field, and provides innovative perspectives and feasible paths for the high-value utilization of by-products in the food industry.
