Valorisation of agri-food industry by-products through the recovery of highadded-value compounds to be applied as food ingredients and additives within the circular economy framework

Year: 2026
Type: dissertation
Abstract: The food industry generates a vast amount of waste along the processing chain. Its management represents a cost at the industrial level, as well as an environmental problem. These industrial wastes represent a source of low-cost compounds which have a unique combination of chemical, biological and physiological activities. Thus, their reuse as ingredients or food additives could be an interesting way to valorise and reduce the environmental impact of the fruit sector. The main objective of this work is to use new approaches for the valorisation of the by-products generated by the fruit industry to reduce waste and develop new products that could be reintroduced in the food market. Additives or food ingredients, new packaging systems and/or new fortified or functional foods could be an example of this. For that, the extraction processes to obtain high-added-value compounds, such as polyphenols, proteins, or flavours, yielded from fruit by-products from processing will be optimised.
